And now for the tasty quesadillas…
This quesadilla recipe has been one of my most requested. College students begged me to make it for them when I was in student ministry and it is now one of my husband’s favorite meals. It’s quite close to my heart, as I came up with it on my own and have “perfected” it through the years. I hope you enjoy it!
Jenni’s Famous Chicken Quesadilla

Ingredients
- 2 flour tortillas
- ½ cooked chicken breast, chunked
- ½ c. cheese, shredded
- ¼ c. fresh spinach, chopped
- 1-2 fresh mushrooma, sliced
- garlic salt, to taste
- pepper, to taste
Instructions
- Place one tortilla in a lightly greased frying pan. Sprinkle with a thin layer of shredded cheese. Add chicken, spinach and sliced mushrooms. Season with a dash of garlic salt and pepper. Sprinkle with another thin layer of shredded cheese. Top with second tortilla. Turn over when bottom tortilla is brown and bottom layer of cheese is melted. Continue cooking until other side is brown and cheese is melted. Cut into 4-8 pieces and serve.
